Holders of centuries of experience, they are present at the tables of the great meals which mark the major moments of Minho culture and peoples, from the affluent to the less affluent.


Carefully prepared, meeting step by step the demanding criteria of an irreproachable hygiene and sanitation process they are, after being seasoned in spicy brine, put in the traditional holm-oak wood smokehouse.
